Be sure to ask for a free tasting of various types and flavors you will have to choose from.  You not only want a wedding cake that looks good, but you want one that will taste delicious and fresh as well.  With that said, the more intricate the design, the longer it will take to create the cake.  Some more fancy/intricate wedding cakes can take a few days to complete.  This means that refrigeration is necessary, and may, or may not affect the freshness or texture of the cake.
It's very common for a wedding cake to take more than one day to complete, however, so don't let this bother you too much.  The amount of time it takes to complete a wedding cake design however does have everything to do with price.  The longer it takes to finish a more intricate design, the more you will pay.  This is fair considering you are asking for an edible work of art, and the baker is truly an artist!
